We have planted only the Cabernet franc variety, on two distinctly different types of soil :
On the foothills, the sandy soil produce "graviers" wine (literally wine grown in gravel soil). These fruity wines packed with aromas can be enjoyed very young.
Higher up the hillslopes, the clay and limestone soils produce "tuffeau" wines (literally wine grown in limestone soil), well rounded and structured, which reach full maturity after aging in barrels and several years in the cellar.
